
This awesome dessert is known as khao nom dok bua in Lao and khao nom dok jok in Thai. In English, they’re simply called lotus flower cookies. The cookies are both aesthetically pleasing and super tasty. This is my aunt’s recipe that she kindly passed down to me. Give it a try!! Ingredients: 8 cups of A/P (all purpose flour) 2 teaspoons of salt 1/2 bag of black sesame seeds (7 oz bag) 2 1/2 cups of white granulated sugar 4 cups of diluted Thai lime stone paste (diluted in water or you can substitute for milk/plain water instead) 6 eggs 1 can of Mae Ploy coconut cream (19 fl oz) Canola oil, as much as needed The batter reminds me of making pancake batter, just slightly thinner. You measure out the dry ingredients first then add the wet ingredients, & mix until smooth. The recipe above is DAIRY FREE if you’re using the Thai lime stone paste but of course, if you’re having a hard time finding it and choose to use milk instead, it would no longer be dairy free. Limestone paste is made from cockleshells, it helps certain foods become crispier & retain its shape better.
